Ingredients

  • 2 c. whole or cream corn
  • 2/3 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs, separated
  • 2 tsp. milk
  • 1/2 c. margarine, softened

Method

  • Sift flour, baking powder and salt.
  • Beat egg whites in small bowl until peaks form.
  • Beat egg yolks and milk.
  • Stir in butter and corn.
  • Fold in flour mixture and egg whites until no streaks of white remain.
  • Drop by rounded tablespoonfuls of batter.
  • Cook in 1/2-inch of oil in deep skillet until edges are brown and crisp.
  • Turn only once.
  • Drain on towels.
