Ingredients
- 2 c. whole or cream corn
- 2/3 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs, separated
- 2 tsp. milk
- 1/2 c. margarine, softened
Method
- Sift flour, baking powder and salt.
- Beat egg whites in small bowl until peaks form.
- Beat egg yolks and milk.
- Stir in butter and corn.
- Fold in flour mixture and egg whites until no streaks of white remain.
- Drop by rounded tablespoonfuls of batter.
- Cook in 1/2-inch of oil in deep skillet until edges are brown and crisp.
- Turn only once.
- Drain on towels.
