Ingredients
- 1 c. chopped onion
- 1/2 c. chopped celery
- 2 Tbsp. butter or margarine, melted
- 3 c. fresh corn, cut from cob
- 1 1/2 c. peeled, cubed potatoes
- 1 1/2 c. water
- 2 chicken flavored bouillon cubes
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. dried whole thyme
- 2 c. milk
- 1 c. half and half
Method
- Saute onion and celery in butter in a large saucepan until tender.
- Stir in corn, potatoes, water, bouillon cubes, salt, pepper and thyme.
- Cover and simmer 15 minutes. Add milk and half and half.
- Cook, stirring constantly, until thoroughly heated. Yields 8 cups.
