Ingredients

  • 1 c. chopped onion
  • 1/2 c. chopped celery
  • 2 Tbsp. butter or margarine, melted
  • 3 c. fresh corn, cut from cob
  • 1 1/2 c. peeled, cubed potatoes
  • 1 1/2 c. water
  • 2 chicken flavored bouillon cubes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dried whole thyme
  • 2 c. milk
  • 1 c. half and half

Method

  • Saute onion and celery in butter in a large saucepan until tender.
  • Stir in corn, potatoes, water, bouillon cubes, salt, pepper and thyme.
  • Cover and simmer 15 minutes. Add milk and half and half.
  • Cook, stirring constantly, until thoroughly heated. Yields 8 cups.
