Ingredients

  • 3 medium potatoes (about 1 lb.), peeled and diced (2 1/2 c.)
  • 1 c. water
  • 1/2 c. chopped onion
  • 1 (11 oz.) can kernel corn, drained
  • 1 (8 3/4 oz.) can creamed corn
  • 1 (12 oz.) can evaporated milk
  • 1 Tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • chili powder

Method

  • Bring potatoes, water and onion to a boil in a large saucepan over medium heat.
  • Cover and simmer 8 to 10 minutes, stirring once or twice, until potatoes are tender.
  • Stir in remaining ingredients.
  • Simmer, uncovered, 3 to 5 minutes for flavor to develop.
  • You may add crumbled bacon, ham bits or seafood.
