Ingredients
- 3 medium potatoes (about 1 lb.), peeled and diced (2 1/2 c.)
- 1 c. water
- 1/2 c. chopped onion
- 1 (11 oz.) can kernel corn, drained
- 1 (8 3/4 oz.) can creamed corn
- 1 (12 oz.) can evaporated milk
- 1 Tbsp. butter
- 1/2 tsp. salt
- 1/2 tsp. pepper
- chili powder
Method
- Bring potatoes, water and onion to a boil in a large saucepan over medium heat.
- Cover and simmer 8 to 10 minutes, stirring once or twice, until potatoes are tender.
- Stir in remaining ingredients.
- Simmer, uncovered, 3 to 5 minutes for flavor to develop.
- You may add crumbled bacon, ham bits or seafood.
