Ingredients
- 1 can creamed corn
- 1 can kernel corn and liquid
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1 pkg. corn muffin mix
- 2 eggs, beaten
- sour cream
- 1 c. Cheddar cheese
Method
- Mix together corns, eggs and muffin mix.
- Saute onion and peppers in margarine.
- Add to corn mixture.
- Place in 9 x 13-inch baking dish.
- Dollop sour cream over top.
- Add Cheddar cheese over top.
- Cover and bake at 400° for 30 minutes.
