Ingredients

  • 1 can drained whole corn
  • 1 can creamed corn
  • 1 pkg. Jiffy cornbread mix
  • 2 c. grated cheese
  • 1 onion, chopped (optional)
  • 2 eggs, beaten
  • 1 stick oleo
  • 1 pt. sour cream
  • salt and pepper to taste
  • 1 Tbsp. bell pepper, chopped fine (optional)

Method

  • Fold corn into beaten eggs.
  • Add cornbread.
  • Mix into egg mixture, then add sour cream, cheese, salt and pepper.
  • If using onion and bell pepper, saute in oleo and add.
  • If not, then just add melted oleo.
  • Pour into a well-greased 9 x 12-inch baking dish. Bake at 375° for 40 minutes.
