Ingredients
- 1 can drained whole corn
- 1 can creamed corn
- 1 pkg. Jiffy cornbread mix
- 2 c. grated cheese
- 1 onion, chopped (optional)
- 2 eggs, beaten
- 1 stick oleo
- 1 pt. sour cream
- salt and pepper to taste
- 1 Tbsp. bell pepper, chopped fine (optional)
Method
- Fold corn into beaten eggs.
- Add cornbread.
- Mix into egg mixture, then add sour cream, cheese, salt and pepper.
- If using onion and bell pepper, saute in oleo and add.
- If not, then just add melted oleo.
- Pour into a well-greased 9 x 12-inch baking dish. Bake at 375° for 40 minutes.
