Ingredients

  • 1/3 c. chicken broth
  • 1 c. fresh or frozen lima beans
  • 1 c. fresh or frozen corn
  • 1/4 tsp. sugar
  • 1/8 tsp. black pepper
  • 2 Tbsp. sour cream

Method

  • In a small, heavy saucepan, bring the chicken broth to a boil. Add the lima beans and corn and reduce heat to moderately low. Cover and simmer for 8 minutes or until vegetables are just tender.
  • Add the sugar and pepper and cook for 2 to 4 minutes or until almost all the liquid has evaporated.
  • Stir in the sour cream and transfer the mixture to a warm vegetable dish.
  • Makes 4 servings.
