- 2 chickens, cut into serving pieces
- 3 Tbsp. butter
- 1/4 lb. bacon, crumbled
- 1/2 c. onion, sliced
- 1 clove garlic, minced
- 2 Tbsp. flour
- 2 Tbsp. parsley
- 1 tsp. marjoram
- 1 bay leaf
- 1/2 tsp. thyme
- 1 tsp. salt
- 1 1/2 c. dry sherry
- 1/2 lb. mushrooms
Method
- Brown chicken in butter and bacon.
- Add onion.
- Drain off some fat.
- Push aside in pan and add seasonings.
- Add sherry and simmer 45 minutes.
- Remove chicken.
- Add mushrooms and flour (if you like thick gravy) and simmer for 10 minutes.
- Pour gravy over chicken (and rice, too!).
- Serves 6 to 8.
