Ingredients

  • 2 chickens, cut into serving pieces
  • 3 Tbsp. butter
  • 1/4 lb. bacon, crumbled
  • 1/2 c. onion, sliced
  • 1 clove garlic, minced
  • 2 Tbsp. flour
  • 2 Tbsp. parsley
  • 1 tsp. marjoram
  • 1 bay leaf
  • 1/2 tsp. thyme
  • 1 tsp. salt
  • 1 1/2 c. dry sherry
  • 1/2 lb. mushrooms

Method

  • Brown chicken in butter and bacon.
  • Add onion.
  • Drain off some fat.
  • Push aside in pan and add seasonings.
  • Add sherry and simmer 45 minutes.
  • Remove chicken.
  • Add mushrooms and flour (if you like thick gravy) and simmer for 10 minutes.
  • Pour gravy over chicken (and rice, too!).
  • Serves 6 to 8.
