Ingredients

  • 1/4 cup red wine vinegar
  • 3 tbsp honey
  • 1/4 to 1/2 teaspoon salt
  • 1 juice of 1/2 lemon
  • 3/4 cup virgin olive oil
  • 1 tbsp roasted garlic

Method

  • Combine the vinegar, honey, salt, and roasted garlic in a blender or food processor.
  • Puree until the ingredients form a paste.
  • With the blender or food processor still running, add the olive oil and lemon juice.
  • Transfer to an airtight container and refrigerate until ready to serve.
  • *To roast garlic, place an unpeeled bulb of garlic on a sheet of aluminum foil and wrap tightly.
  • Roast in a preheated 400F oven for about 45 minutes, until soft.
  • Unwrap and allow to cool.
  • Peel the cloves and squeeze out the pulp.
