Ingredients

  • 1 (6 oz.) pkg. lime gelatin
  • 1 c. boiling water
  • 20 oz. can crushed pineapple, drained, reserving juice
  • 12 oz. cottage cheese
  • 3 oz. pkg. cream cheese, softened
  • 2 oz. jar pimentos, chopped
  • 4 oz. Hidden Valley Green Goddess dressing
  • 8 oz. burpless cucumber, unpeeled and diced (these are very long cucumbers usually hothouse and individually wrapped in the produce department)

Method

  • Dissolve gelatin in 1 cup boiling water.
  • Cool. Add 1 cup pineapple juice.
  • Add water, if necessary, to make 1 cup.
  • Mix well with cottage cheese, cream cheese, pineapple, dressing, pimentos and cucumber.
  • Pour into shallow dish with cover and refrigerate.
  • Cut into squares to serve.
