- 1 (6 oz.) pkg. lime gelatin
- 1 c. boiling water
- 20 oz. can crushed pineapple, drained, reserving juice
- 12 oz. cottage cheese
- 3 oz. pkg. cream cheese, softened
- 2 oz. jar pimentos, chopped
- 4 oz. Hidden Valley Green Goddess dressing
- 8 oz. burpless cucumber, unpeeled and diced (these are very long cucumbers usually hothouse and individually wrapped in the produce department)
Method
- Dissolve gelatin in 1 cup boiling water.
- Cool. Add 1 cup pineapple juice.
- Add water, if necessary, to make 1 cup.
- Mix well with cottage cheese, cream cheese, pineapple, dressing, pimentos and cucumber.
- Pour into shallow dish with cover and refrigerate.
- Cut into squares to serve.
