Ingredients
- 1 lb. cod fillets, washed and patted dry
- 2 Tbsp. vegetable oil
- 2 large onions, thinly sliced
- 4 large garlic cloves, minced
- 3 carrots, thinly sliced
- 1/8 tsp. thyme
- 1/8 tsp. oregano
- salt
- tamari or soy sauce
Method
- Place cod in a large skillet and pour 1/2 cup water over. Cover and simmer for 5 minutes.
- Remove fish.
- In a separate skillet, heat oil and saute onions, garlic and carrots until onion is transparent.
- Pour fish cooking water over; add herbs, cover and simmer for 15 minutes.
- When carrots are barely tender, gently place fish on top of vegetables; heat through.
- Taste and season with a little salt and tamari, as desired.
- Serve with brown rice.
