Ingredients

  • 1 lb. cod fillets, washed and patted dry
  • 2 Tbsp. vegetable oil
  • 2 large onions, thinly sliced
  • 4 large garlic cloves, minced
  • 3 carrots, thinly sliced
  • 1/8 tsp. thyme
  • 1/8 tsp. oregano
  • salt
  • tamari or soy sauce

Method

  • Place cod in a large skillet and pour 1/2 cup water over. Cover and simmer for 5 minutes.
  • Remove fish.
  • In a separate skillet, heat oil and saute onions, garlic and carrots until onion is transparent.
  • Pour fish cooking water over; add herbs, cover and simmer for 15 minutes.
  • When carrots are barely tender, gently place fish on top of vegetables; heat through.
  • Taste and season with a little salt and tamari, as desired.
  • Serve with brown rice.
