Ingredients

  • 2 c. all-purpose flour
  • 1 tsp. salt (optional)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. shortening or margarine
  • 1 c. brown sugar, packed
  • 1 c. white sugar
  • 2 eggs
  • 2 c. shredded coconut
  • 1 c. rolled oats
  • 2 tsp. vanilla

Method

  • Cream shortening and sugar until fluffy; add eggs.
  • Add dry ingredients in 4 parts.
  • Mix in oats, coconut and vanilla.
  • Drop by teaspoons on ungreased cookie sheet.
  • Bake in moderate oven (375°) for 10 to 12 minutes until cookies are golden brown.
  • Makes 5 dozen chewy cookies.
