Ingredients
- 2 1/2 c. all-purpose flour
- 1 1/4 c. flaked coconut, toasted
- 1 c. sugar
- 1 Tbsp. plus 1 tsp. baking powder
- 1 tsp. salt
- 1 1/2 c. milk
- 2 Tbsp. vegetable oil
- 1 egg
- 1 tsp. coconut extract
Method
- Combine first 5 ingredients in a large bowl; make a well in center of mixture.
- Combine remaining ingredients; add to dry ingredients, stirring until moistened.
- Spoon into a greased and floured 9 x 6 x 3-inch loaf pan.
- Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.
- Cool bread in pan for about 10 minutes.
- Remove from pan and cool completely on a wire rack.
- Yield:
- 1 loaf.
