Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 1/4 c. flaked coconut, toasted
  • 1 c. sugar
  • 1 Tbsp. plus 1 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 c. milk
  • 2 Tbsp. vegetable oil
  • 1 egg
  • 1 tsp. coconut extract

Method

  • Combine first 5 ingredients in a large bowl; make a well in center of mixture.
  • Combine remaining ingredients; add to dry ingredients, stirring until moistened.
  • Spoon into a greased and floured 9 x 6 x 3-inch loaf pan.
  • Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.
  • Cool bread in pan for about 10 minutes.
  • Remove from pan and cool completely on a wire rack.
  • Yield:
  • 1 loaf.
