Ingredients

  • 1/8 tsp. olive oil
  • 1/4 cup dried parsley
  • 4 cloves garlic minced
  • 2 cans minced clams, undrained
  • 1 can diced tomatoes, drained
  • 1/4 cup white wine
  • Italian seasoning, to taste
  • Salt and pepper, to taste

Method

  • In a large saucepan, on medium heat, heat garlic in oil until tender.
  • Add clams with liquid stirring slowly.
  • Add parsley and Italian seasoning while stirring.
  • Bring to a boil, reduce heat and simmer for five minutes.
  • Stir in tomatoes, simmer for ten minutes.
  • Stir in white wine, salt and pepper.
  • Simmer for ten to fifteen more minutes (remember, clams cook fast).
  • Remove from heat, serve over hot pasta.
