Ingredients
- 25 medium clams, shucked, drained and chopped fine
- 2 medium onions, chopped finely
- 1 egg, lightly beaten
- 2 c. pancake flour
- 1/4 tsp. seasoning salt
- 1/4 tsp. pepper
- vegetable oil
Method
- Combine pancake mix, salt and pepper; set aside.
- In another bowl beat egg and add onions.
- Mix well.
- Stir mixture into dry ingredients.
- Add clams.
- Stir until smooth.
- Drop clam mixture into large cast-iron skillet with hot oil. Fry until golden brown.
