Ingredients

  • 1 large can Costco chopped clams
  • 6 c. diced potatoes
  • 1 1/2 c. water
  • 1/2 medium onion, chopped
  • 2 c. milk
  • dash of oil
  • 2 Tbsp. all-purpose flour
  • 1 c. half and half
  • 1 1/2 tsp. salt
  • pepper to taste
  • 1 c. diced chilies

Method

  • Strain liquid from clams, reserving 1/2 cup.
  • In large pot, saut onions, then add reserved clam liquid, potatoes and water. Bring to a boil; cover and simmer until potatoes are tender (15 to 20 minutes).
  • Stir in clams.
  • Blend 1/4 cup milk into flour, then blend into remaining milk.
  • Stir into chowder with half and half and cook, stirring until boiling.
  • Add salt and pepper; stir and serve with soup crackers with a dab of butter.
  • Can add a dash of Tabasco sauce.
