Ingredients
- 1 large can Costco chopped clams
- 6 c. diced potatoes
- 1 1/2 c. water
- 1/2 medium onion, chopped
- 2 c. milk
- dash of oil
- 2 Tbsp. all-purpose flour
- 1 c. half and half
- 1 1/2 tsp. salt
- pepper to taste
- 1 c. diced chilies
Method
- Strain liquid from clams, reserving 1/2 cup.
- In large pot, saut onions, then add reserved clam liquid, potatoes and water. Bring to a boil; cover and simmer until potatoes are tender (15 to 20 minutes).
- Stir in clams.
- Blend 1/4 cup milk into flour, then blend into remaining milk.
- Stir into chowder with half and half and cook, stirring until boiling.
- Add salt and pepper; stir and serve with soup crackers with a dab of butter.
- Can add a dash of Tabasco sauce.
