Ingredients

  • 1/2 pounds Bacon, Cut In 1/4 Inch Pieces
  • 1/2 whole Yellow Onion, Diced
  • 2 cans (14 Oz. Can) Chicken Stock Or Use Your Homemade
  • 2 cups Water
  • 2 pieces Bay Leaf
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoons Pepper
  • 5 whole Potatoes, Peeled And Diced
  • 1 can (14 Oz. Can) Clams With Juice
  • 3 cups Milk
  • 4 Tablespoons Margarine
  • 1 cup Instant Potato Flakes

Method

  • In a large pot, brown bacon first, do not drain. Add onion, cook till translucent. Add chicken stock and the water and all the seasonings. Bring to a boil and simmer for 20 minutes. Add potatoes and clams, simmer another 30 minutes until potatoes are tender. Add milk and margarine and stir. Bring back to medium heat 10 minutes, then slowly add instant potatoes, stirring constantly until thickened. Enjoy!
