Ingredients
- 1 clove garlic minced
- 1/2 cup cilantro leaves fresh
- 1/2 cup fresh mint leaves
- 2 tablespoons pine nuts
- 1/2 teaspoon salt
- 1/4 cup Parmesan cheese freshly grated
- 1/2 cup olive oil
Method
- Add the garlic, cilantro, mint, pine nuts, salt and Parmesan to a blender or food processor and pulse to combine.
- Scrape down the sides and blend for 30 seconds.
- While mixture is blending, slowly add the olive oil.
- Taste for seasoning.
- Scoop into a dish until needed.
