Ingredients

  • 2 c. powdered sugar
  • 1 c. butter or margarine
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. rum extract
  • 3 c. all-purpose flour
  • 1 tsp. salt
  • 1 c. butterscotch-flavored chips, divided
  • granulated sugar
  • 1/2 c. candied red cherries, cut in wedges
  • 1 c. shredded coconut

Method

  • In a large mixing bowl, cream the powdered sugar and butter until smooth.
  • Blend in eggs, vanilla and rum extract.
  • Stir together the flour and salt.
  • Gradually add dry ingredients to creamed mixture; blend well.
  • Stir in coconut and 3/4 cup butterscotch chips.
  • Chill dough until firm.
