Ingredients
- 6 separated eggs
- 1/4 tsp. salt
- 2 c. whipping cream
- 1 1/2 c. sugar, divided
- 1 1/2 qt. milk
- 2 tsp. vanilla
- ground nutmeg
Method
- Beat egg yolks; gradually add 1 cup sugar and the salt, beating
- constantly.
- Gradually add milk and cream.
- Cook over hot water,
- stirring
- constantly
- until
- mixture thickens and coats spoon.
- Cool.
- Add vanilla
- and
- chill.
- To serve, beat egg whites
- until
- foamy.
- Gradually beat in remaining 1/2 cup sugar and fold into chilled custard.
- Spoon into chilled punch bowl and sprinkle
- with nutmeg.
- Yield:
- 4 quarts or 30 servings.
