Ingredients

  • 6 separated eggs
  • 1/4 tsp. salt
  • 2 c. whipping cream
  • 1 1/2 c. sugar, divided
  • 1 1/2 qt. milk
  • 2 tsp. vanilla
  • ground nutmeg

Method

  • Beat egg yolks; gradually add 1 cup sugar and the salt, beating
  • constantly.
  • Gradually add milk and cream.
  • Cook over hot water,
  • stirring
  • constantly
  • until
  • mixture thickens and coats spoon.
  • Cool.
  • Add vanilla
  • and
  • chill.
  • To serve, beat egg whites
  • until
  • foamy.
  • Gradually beat in remaining 1/2 cup sugar and fold into chilled custard.
  • Spoon into chilled punch bowl and sprinkle
  • with nutmeg.
  • Yield:
  • 4 quarts or 30 servings.
