Ingredients

  • 4 c. boiling water
  • 4 c. hot half and half
  • 1 medium diced onion
  • 2 c. shredded carrots
  • 2 lb. potatoes, cubed
  • 4 oz. salt pork, diced
  • 1 stick butter
  • 3 Tbsp. olive oil
  • salt, pepper and garlic
  • 1/2 c. flour
  • 1 lb. cooked diced chicken or canned clams, diced, or crab

Method

  • Brown salt pork in olive oil in bottom of 5-quart kettle.
  • Add onion and simmer until clear.
  • Add water, potatoes and carrots. Cook until tender.
  • Add hot half and half, meat and seasoning and butter; use flour to thicken.
