Ingredients
- 4 c. boiling water
- 4 c. hot half and half
- 1 medium diced onion
- 2 c. shredded carrots
- 2 lb. potatoes, cubed
- 4 oz. salt pork, diced
- 1 stick butter
- 3 Tbsp. olive oil
- salt, pepper and garlic
- 1/2 c. flour
- 1 lb. cooked diced chicken or canned clams, diced, or crab
Method
- Brown salt pork in olive oil in bottom of 5-quart kettle.
- Add onion and simmer until clear.
- Add water, potatoes and carrots. Cook until tender.
- Add hot half and half, meat and seasoning and butter; use flour to thicken.
