- 2 lbs medium shrimp, peeled and deveined
- 1/4 cup butter or margarine
- pinch salt
- 4 cloves garlic, minced
- 1 cup minced scallions
- 1/4 cup fresh squeezed lime juice
- coarsely ground black pepper
- tabasco or other hot sauce to taste
- 1/4 cup fresh ground parsley
Method
- saute butter butter, garlic, scallions.
- Prepare shrimp.
- Add the shrimp, lime juice, pepper, and parsley.
- cover and refrigerate 2 hrs.
- Thread shrimp on metal skewers with onion and red peppers. reserve the marinade for basting.
- Grill until shrimp turns pink. (about 4 minutes per side)
