Ingredients

  • 2 lbs medium shrimp, peeled and deveined
  • 1/4 cup butter or margarine
  • pinch salt
  • 4 cloves garlic, minced
  • 1 cup minced scallions
  • 1/4 cup fresh squeezed lime juice
  • coarsely ground black pepper
  • tabasco or other hot sauce to taste
  • 1/4 cup fresh ground parsley

Method

  • saute butter butter, garlic, scallions.
  • Prepare shrimp.
  • Add the shrimp, lime juice, pepper, and parsley.
  • cover and refrigerate 2 hrs.
  • Thread shrimp on metal skewers with onion and red peppers. reserve the marinade for basting.
  • Grill until shrimp turns pink. (about 4 minutes per side)
