Ingredients

  • 1 lb. boneless pork, cubed
  • 2 Tbsp. shortening
  • 1/2 c. chopped onion
  • 5 oz. can water chestnuts, sliced and drained
  • 1 can cream of mushroom soup
  • 2 c. water
  • 1 1/2 c. chopped celery
  • 3/4 c. uncooked long grain rice
  • 2 Tbsp. soy sauce
  • 1/2 tsp. pepper

Method

  • Brown pork in shortening in skillet.
  • Add remaining ingredients.
  • Place in 2-quart casserole and cover.
  • Bake at 350° for 1 1/2 hours.
  • Remove cover during last 30 minutes.
  • Add additional water if necessary.
  • Add chow mein noodles to top for the last 5 minutes.
