Ingredients
- 12 lb chorizo sausage
- 1 12 cups milk
- 6 cups monterey jack cheese, shredded
- 15 ounces Rotel Tomatoes
- 12 teaspoon salt and 1/2 t pepper
- 12 cup cilantro (optional)
Method
- Cook and drain chorizo.
- Med/low heat, add milk and slowly whisk in cheese until sauce is thick, about 5 minutes.
- Stir in chorizo and tomatoes.
- Season w/s&p, garnish w/cilantro.
- If to thick add more milk.
