Ingredients

  • 1 12 cups watercress leaves, cut into small pieces
  • 1 cup whole fresh parsley leaves
  • 1 cup diced celery or 1 cup heart fennel
  • 14 cup chopped red onion
  • 1 12 cups cherry tomatoes, halved
  • 12 cup sliced radish
  • 3 ounces string beans, trimmed and steamed
  • 12 small avocado, peeled and cubed
  • 12 cup drained chickpeas
  • 3 tablespoons drained capers
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh orange juice
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sugar
  • 1 teaspoon sugar
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon minced mint leaf

Method

  • Combine watercress, parsley, celery, onion, tomatoes, radishes, beans, avocado, chick peas and capers in a large bowl.
  • In a small bowl, whisk together lemon, orange and lime juices, sugar and oil.
  • Stir in mint.
  • Salt and pepper to taste.
  • Toss with salad greens.
