Ingredients

  • 6 tbsp olive oil
  • 2-3 tbsp lime juice
  • 1-2 None garlic cloves, crushed
  • None None Pinch cayenne pepper
  • 12 oz tomatoes, sliced into wedges
  • 7 oz zucchini, diced
  • 1 None red onion, sliced into rings
  • 1 can (11 oz) whole kernel corn
  • 4 oz semi-firm goat cheese cheese, cubed
  • 1/2 head iceberg lettuce, sliced

Method

  • For the dressing, whisk the oil, lime juice, garlic and cayenne pepper until well blended. Season with salt and pepper. Toss the vegetables with the dressing in a large bowl.
  • Sprinkle with salad with the cheese. Serve the lettuce on the side.
