Ingredients
- 2 (10 oz.) pkg. frozen, chopped broccoli, thawed
- 1/2 (5 oz.) can cream of mushroom soup
- 1/2 c. (2 oz.) grated Cheddar cheese
- 1/2 c. mayonnaise
- 1 egg
- 1 tsp. finely chopped onion
- 1/8 tsp. cayenne pepper (optional)
- 1/2 c. crumbled Ritz crackers
- 1 Tbsp. butter, melted
Method
- Preheat oven to 350°.
- Squeeze excess water from thawed broccoli and drain well.
- Place broccoli in a large bowl; mix in mushroom soup, grated cheese, mayonnaise, egg, onion and cayenne pepper, if desired.
- Pour mixture into a 1-quart casserole that has been coated with nonstick vegetable spray.
