Ingredients

  • 2 (10 oz.) pkg. frozen, chopped broccoli, thawed
  • 1/2 (5 oz.) can cream of mushroom soup
  • 1/2 c. (2 oz.) grated Cheddar cheese
  • 1/2 c. mayonnaise
  • 1 egg
  • 1 tsp. finely chopped onion
  • 1/8 tsp. cayenne pepper (optional)
  • 1/2 c. crumbled Ritz crackers
  • 1 Tbsp. butter, melted

Method

  • Preheat oven to 350°.
  • Squeeze excess water from thawed broccoli and drain well.
  • Place broccoli in a large bowl; mix in mushroom soup, grated cheese, mayonnaise, egg, onion and cayenne pepper, if desired.
  • Pour mixture into a 1-quart casserole that has been coated with nonstick vegetable spray.
