Ingredients

  • 2-1/4 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup (2 sticks) butter, softened
  • 2 cups sugar
  • 5 eggs
  • 3 oz. BAKER'S Unsweetened Chocolate, melted, cooled slightly
  • 2 tsp. vanilla
  • 1 cup buttermilk
  • 1/2 cup finely chopped PLANTERS Pecans
  • 1/2 cup dried cranberries

Method

  • Preheat oven to 350F.
  • Grease and flour two 9x5-loaf pans.
  • Mix flour, baking soda and salt; set aside.
  • Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in chocolate and vanilla.
  • Add flour mixture alternately with the buttermilk, beating after each addition until well blended.
  • Stir in pecans and cranberries.
  • Spread evenly into prepared pans.
  • Bake 50 to 55 min.
  • or until toothpick inserted in centers comes out clean.
  • Cool in pans 10 min.
  • ; remove from pans to wire racks.
  • Cool completely.. Cut each loaf into 16 slices.
