Ingredients
- 1 3/4 cup self-rising flour
- 1/2 c. sugar
- 2 Tbsp. cocoa
- 1 egg
- 3/4 c. chocolate milk
- 1/3 c. oil
- 1/2 tsp. vanilla extract
Method
- Preheat oven to 400 degrees. Grease 10 muffin cups.
- Combine flour, sugar, and cocoa.
- Stir to mix.
- In another bowl, combine egg, chocolate milk, oil and extract. Whisk until well mixed. Combine two mixtures and stir just until mixed.
- Batter should appear lumpy.
- Fill muffin cups 2/3 full.
- Bake for about 20 minutes or until a toothpick comes out clean when inserted into center of muffin. Good served warm, plain or buttered. Honey butter is good with these muffins.
