Ingredients

  • 1 3/4 cup self-rising flour
  • 1/2 c. sugar
  • 2 Tbsp. cocoa
  • 1 egg
  • 3/4 c. chocolate milk
  • 1/3 c. oil
  • 1/2 tsp. vanilla extract

Method

  • Preheat oven to 400 degrees. Grease 10 muffin cups.
  • Combine flour, sugar, and cocoa.
  • Stir to mix.
  • In another bowl, combine egg, chocolate milk, oil and extract. Whisk until well mixed. Combine two mixtures and stir just until mixed.
  • Batter should appear lumpy.
  • Fill muffin cups 2/3 full.
  • Bake for about 20 minutes or until a toothpick comes out clean when inserted into center of muffin. Good served warm, plain or buttered. Honey butter is good with these muffins.
