Ingredients

  • 4 sq. (4 oz.) unsweetened chocolate, melted
  • 1/2 c. vegetable oil
  • 2 c. granulated sugar
  • 4 eggs
  • 2 tsp. vanilla extract
  • 2 c. all-purpose flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 c. semi-sweet chocolate chips (optional)
  • 1 c. confectioners sugar

Method

  • Melt chocolate in the top of a double boiler.
  • In a large bowl, mix together oil and sugar.
  • Stir in melted chocolate.
  • Beat in eggs, one at a time, mixing well after each addition.
  • Stir in vanilla.
  • Stir in flour, salt and baking powder.
  • Fold in chocolate chips.
  • Wrap dough in plastic wrap and refrigerate overnight or for at least 2 hours.
  • Preheat oven to 350°.
  • Prepare greased cookie sheets.
  • Roll dough into walnut-sized balls and then roll balls in confectioners sugar.
  • Place balls 1-inch apart on cookie sheets and bake for 10 minutes or until cookies have white cracks on top showing chocolate beneath.
  • Cookies will crack on top.
  • Remove cookies to a wire rack to cool.
  • Yield:
