Ingredients

  • 1 cup (250 mL) graham wafer crumbs
  • 2 tbsp (25 mL) granulated sugar
  • 2 tbsp (25 mL) vegetable oil
  • 1/2 tsp (2 mL) ground cinnamon
  • 1 package (10.25 oz/290 g) silken soft tofu
  • 2 eggs
  • 2/3 cup (175 mL) granulated sugar
  • 1/3 cup (75 mL) unsweetened cocoa powder
  • 2 tsp (10 mL) vanilla
  • 1/2 tsp (2 mL) salt
  • Sliced strawberries (optional)
  • 8-inch (2 L) square cake pan, lined with parchment paper

Method

  • Preheat oven to 350F (180C).
  • In a small bowl, stir together graham wafer crumbs, sugar, oil and cinnamon.
  • Press onto bottom of prepared pan.
  • Using a sieve, drain tofu.
  • In a medium bowl, using an electric mixer, beat together drained tofu, eggs, sugar, cocoa, vanilla and salt until smooth.
  • Pour into pan.
  • Bake in preheated oven for 35 to 40 minutes, or until firm.
  • Let cool on a wire rack.
  • Cut into 16 squares and garnish each piece with strawberry slice (if using).
