Ingredients

  • 2 whole chicken breast or 12 chicken tenders, cooked and shredded
  • 4 scallions, sliced on the diagonal
  • 1 head romaine, sliced for salad
  • 1/4 package rice sticks, fried in about an inch of hot vegetable oil, drained on paper towels
  • 2 tablespoons sesame seeds
  • 1/4 cup almonds, slivered and toasted
  • Dressing
  • 4 tablespoons sugar
  • 4 tablespoons seasoned rice vinegar
  • 1 teaspoon salt
  • 1 teaspoon MSG ( I omit this and don't miss it)
  • 1/3 to 1/2 cup vegetable or corn oil

Method

  • Prepare all ingredients separately. Keep chicken, lettuce, scallions cool until ready to use.
  • Prepare dressing by combining 1st four ingredients. Heat until just boiling to dissolve sugar. Cool, mix in oil.
  • Toss all ingredients, add dressing, toss again and serve at once.
