Ingredients
- 2 whole chicken breast or 12 chicken tenders, cooked and shredded
- 4 scallions, sliced on the diagonal
- 1 head romaine, sliced for salad
- 1/4 package rice sticks, fried in about an inch of hot vegetable oil, drained on paper towels
- 2 tablespoons sesame seeds
- 1/4 cup almonds, slivered and toasted
- Dressing
- 4 tablespoons sugar
- 4 tablespoons seasoned rice vinegar
- 1 teaspoon salt
- 1 teaspoon MSG ( I omit this and don't miss it)
- 1/3 to 1/2 cup vegetable or corn oil
Method
- Prepare all ingredients separately. Keep chicken, lettuce, scallions cool until ready to use.
- Prepare dressing by combining 1st four ingredients. Heat until just boiling to dissolve sugar. Cool, mix in oil.
- Toss all ingredients, add dressing, toss again and serve at once.
