Ingredients
- 2 1/2 c. cooked chicken or browned ground beef
- 2/3 c. salsa
- 1/3 c. sliced green onions
- 3/4 to 1 tsp. cumin
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 8 flour tortillas (fajita style)
- butter
- 1 c. cheese (Cheddar or Monterey Jack)
Method
- Combine all ingredients except tortillas, butter and cheese, in saucepan.
- Simmer until meat liquid is gone (about 5 minutes). Butter one side of tortilla.
- Spoon about 1/3 cup of mixture onto center of unbuttered side; top with 2 tablespoons cheese.
- Fold 2 sides over filling; fold ends down.
- Place seam-side down in 13 x 9 x2-inch baking dish.
- Bake in preheated oven at 475° for about 15 minutes, until crisp and golden brown.
- Top with guacamole, sour cream, salsa, whatever.
- Makes 4 servings.
