Ingredients

  • 1 lb. dry lentils
  • 1 tsp. salt
  • 5 c. boiling water
  • 1 (16 oz.) can tomatoes or tomato sauce
  • 1 1/2 Tbsp. chili powder
  • 1 medium onion, chopped
  • 1/2 c. celery, chopped
  • 1 clove garlic, minced

Method

  • Rinse dry lentils.
  • Pick out any stems or stones.
  • Add salt and dry lentils to boiling water.
  • Cover and simmer 30 minutes. Do not drain.
  • Add tomatoes or tomato sauce, chili powder, onion, celery and garlic; cover and simmer 30 minutes more.
  • Serve over rice, spaghetti or corn chips.
