Ingredients
- 1 lb. dry lentils
- 1 tsp. salt
- 5 c. boiling water
- 1 (16 oz.) can tomatoes or tomato sauce
- 1 1/2 Tbsp. chili powder
- 1 medium onion, chopped
- 1/2 c. celery, chopped
- 1 clove garlic, minced
Method
- Rinse dry lentils.
- Pick out any stems or stones.
- Add salt and dry lentils to boiling water.
- Cover and simmer 30 minutes. Do not drain.
- Add tomatoes or tomato sauce, chili powder, onion, celery and garlic; cover and simmer 30 minutes more.
- Serve over rice, spaghetti or corn chips.
