Ingredients

  • 14 oz penne
  • 1 tbsp olive oil
  • 1 None onion, peeled and chopped
  • 1 clove garlic, peeled and crushed
  • 3 1/2 oz salami or other sausage, cut into strips
  • 14-15 oz can red kidney beans in chili sauce
  • 14-15 oz can chopped tomatoes
  • 1 tbsp basil leaves, roughly chopped
  • 1/2 cup feta, crumbled
  • None None Bread, salad (optional), to serve

Method

  • Cook the pasta in plenty of boiling salted water for 10 mins, until just tender.
  • Meanwhile, heat the oil in a large skillet on medium. Saute the onion and garlic for 2 mins, until tender. Add the salami strips and cook, stirring for 3 mins.
  • Stir in beans and tomatoes, and bring to boil. Reduce heat and simmer the mixture for 3 mins. Season to taste.
  • Drain the pasta and return to the pan. Toss with the sauce and basil. Top with feta and serve with bread and salad, if desired.
