Ingredients

  • 1 head chicory, thinly sliced
  • 1 celery hearts, thinly sliced
  • 2 oranges, peeled and segmented
  • 4 ounce. grapes, white, seedless
  • 2 red apples, cored, sliced
  • 1/4 c. lemon juice
  • 2 ounce. mushrooms, sliced
  • 2 ounce. English walnuts, coarsely minced
  • 1 bunch watercress
  • 4 tbsp. salad oil
  • 2 tbsp. orange juice
  • 1 tbsp. lemon juice
  • 1 teaspoon sugar
  • 2 spring onions, thinly sliced
  • Salt and pepper to taste

Method

  • Dip apple slices in lemon juice to keep from turning brown.
  • In a large salad bowl toss together chicory, celery, orange segments, grapes, apple slices, mushrooms, walnuts, and watercress.
  • For dressing, mix together salad oil, orange juice, 1 Tbsp.
  • lemon juice, sugar, spring onions, and season to your liking with salt and pepper.
  • Add in dressing to salad just prior to serving.
  • Serves: 4.
