- 1 head chicory, thinly sliced
- 1 celery hearts, thinly sliced
- 2 oranges, peeled and segmented
- 4 ounce. grapes, white, seedless
- 2 red apples, cored, sliced
- 1/4 c. lemon juice
- 2 ounce. mushrooms, sliced
- 2 ounce. English walnuts, coarsely minced
- 1 bunch watercress
- 4 tbsp. salad oil
- 2 tbsp. orange juice
- 1 tbsp. lemon juice
- 1 teaspoon sugar
- 2 spring onions, thinly sliced
- Salt and pepper to taste
Method
- Dip apple slices in lemon juice to keep from turning brown.
- In a large salad bowl toss together chicory, celery, orange segments, grapes, apple slices, mushrooms, walnuts, and watercress.
- For dressing, mix together salad oil, orange juice, 1 Tbsp.
- lemon juice, sugar, spring onions, and season to your liking with salt and pepper.
- Add in dressing to salad just prior to serving.
- Serves: 4.
