Ingredients

  • 2 tablespoons cajun seasoning
  • 1 tablespoon flour
  • 1 teaspoon paprika
  • 34 lb boneless chicken breast, cut into strips
  • 14 teaspoon salt
  • 18 teaspoon pepper
  • 4 teaspoons fat-free mayonnaise (I used regular and added 1/2 point)
  • 1 12 teaspoons lemon juice
  • 4 whole wheat tortillas
  • 12 red onion, sliced
  • 1 tomatoes, chopped

Method

  • In a pie pan combine first 3 ingredients (seasoning - paprika).
  • Season chicken with salt and pepper and then dredge chicken in seasoning, turning to coat.
  • Spray a large skillet with Pam and set over medium high heat.
  • Add chicken pieces and cook, turning until cooked through (5 minutes).
  • Remove from pan and set aside.
  • In a small bowl combine dressing ingredients (mayonnaise and lemon juice).
  • Warm tortillas in microwave (1 minute) and then spread each tortilla 1 teaspoon of dressing, 1/4 of the chicken, tomato and onion and also mixed greens if desired.
  • Roll up and serve.
