- 1 c. orzo
- 2 Tbs. olive oil
- 4 cloves garlic
- 1/3 tsp. red pepper
- 2 skinless, boneless chicken breasts
- 1 Tbs. fresh parsley
- 2 cups fresh spinach leaves
- Parmesan cheese
- Greek -
- add 1 tsp oregano
- feta cheese
- Greek olives
- Italian-
- add 1 tsp basil
Method
- 1. Bring large pot lightly salted water to boil. Add orzo, cook for 8 - 10 min, until al dente.
- 2. Heat oil in a skillet over High-Medium heat and cook the garlic and red pepper 1 min, until golden brown. Stir in chicken, season with salt, cook 2 - 5 minutes. Reduce heat, add parsley (Greek add oregano; Italian add basil)and cooked orzo. Add spinach. Cook 5 minutes until spinach is wilted.
