Ingredients

  • 1 c. orzo
  • 2 Tbs. olive oil
  • 4 cloves garlic
  • 1/3 tsp. red pepper
  • 2 skinless, boneless chicken breasts
  • 1 Tbs. fresh parsley
  • 2 cups fresh spinach leaves
  • Parmesan cheese
  • Greek -
  • add 1 tsp oregano
  • feta cheese
  • Greek olives
  • Italian-
  • add 1 tsp basil

Method

  • 1. Bring large pot lightly salted water to boil. Add orzo, cook for 8 - 10 min, until al dente.
  • 2. Heat oil in a skillet over High-Medium heat and cook the garlic and red pepper 1 min, until golden brown. Stir in chicken, season with salt, cook 2 - 5 minutes. Reduce heat, add parsley (Greek add oregano; Italian add basil)and cooked orzo. Add spinach. Cook 5 minutes until spinach is wilted.
