Ingredients

  • 1 hen
  • 1 large pkg. noodles
  • 4 medium onions
  • 2 bell peppers
  • 2 c. celery
  • 1 small can mushrooms
  • 6 green olives
  • juice of 1 lemon
  • 1 can mushroom soup
  • 1/2 lb. American or Cheddar cheese

Method

  • Cook hen in plenty of broth.
  • Remove and cut in bite-size pieces.
  • Strain broth and remove most of fat.
  • Cook noodles in broth.
  • Let most of broth cook out.
  • Then add chicken, vegetables, soup and lemon juice.
  • Put in a large baking dish or roaster and cook for 30 to 40 minutes at 350°.
  • During the last 20 minutes, add cheese.
  • Serves 15.
