- 2 Tbsp. butter (unsalted)
- 2 Tbsp. shallots, finely chopped
- 10 mushrooms, sliced
- 2 chicken breasts, boned and skinned
- 6 prawns, shelled and deveined
- 1 1/2 tsp. fresh thyme, chopped
- 1 1/2 tsp. parsley, chopped
- 3/4 c. dry white wine
- 1/2 c. whipping cream
- 1/2 tsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. white pepper
- 1/2 tsp. nutmeg
- 1 c. cooked rice
Method
- Season chicken breasts with salt and pepper.
- Melt butter in a skillet.
- Add shallots, mushrooms, thyme and chicken breasts. Sprinkle parsley and nutmeg over chicken.
- Add wine and lemon juice; simmer, covered, for about 10 minutes.
- Remove chicken to serving dish.
- Add prawns to broth; cook about 1 minute, or until done.
- Remove prawns to serving dish.
