Ingredients

  • 2 Tbsp. butter (unsalted)
  • 2 Tbsp. shallots, finely chopped
  • 10 mushrooms, sliced
  • 2 chicken breasts, boned and skinned
  • 6 prawns, shelled and deveined
  • 1 1/2 tsp. fresh thyme, chopped
  • 1 1/2 tsp. parsley, chopped
  • 3/4 c. dry white wine
  • 1/2 c. whipping cream
  • 1/2 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper
  • 1/2 tsp. nutmeg
  • 1 c. cooked rice

Method

  • Season chicken breasts with salt and pepper.
  • Melt butter in a skillet.
  • Add shallots, mushrooms, thyme and chicken breasts. Sprinkle parsley and nutmeg over chicken.
  • Add wine and lemon juice; simmer, covered, for about 10 minutes.
  • Remove chicken to serving dish.
  • Add prawns to broth; cook about 1 minute, or until done.
  • Remove prawns to serving dish.
