Ingredients

  • 1 (6 oz.) pkg. Uncle Ben's long grain rice
  • 3 c. cooked and diced chicken white meat
  • 1 c. sliced mushrooms (canned or fresh), sauteed in butter
  • 6 Tbsp. chopped pimento
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped parsley
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 1/4 c. chicken broth or bouillon
  • sliced almonds for the top

Method

  • Cook rice according to directions on package.
  • Add rest of ingredients and mix well.
  • Add salt and pepper to taste.
  • Put in casserole; cover with almonds.
  • Bake at least 1 hour at 350° or until bubbly.
