Ingredients

  • chicken pieces Whole, with the skins!, eg. 2 wings, a neck, and 1-2 medium sized pieces like the thigh and a leg, or breast.
  • 2 carrots chopped into very large pieces
  • 1 onion chopped into quarters
  • water
  • salt I like to use black rock salt

Method

  • Clean the chicken (keep skin on!) and add to pot. Add the onion and carrots on top.
  • Let them simmer medium low heat for about 15 minutes. Stir once in a while.
  • Add water and bring to a boil. (Faster - you can also just heat water in an urn and pour it in.)
  • Add salt to taste.
  • Let it all simmer on low for at least 2 - 2.5 hrs but it can sit for longer if you want, taste it to see how you like it.
