Ingredients

  • 3/4 pound boneless chicken, cut into strips
  • 2 tbsp. butter
  • 1 red bell pepper, julienned
  • 1 c. zucchini, julienned
  • 1 can (4 1/2 ounce.) sm. shrimp, liquid removed or possibly use fresh shelled shrimp
  • 1/2 c. thinly sliced scallion
  • 1 c. crushed canned tomatoes
  • 1/2 c. Heinz homestyle chicken gravy
  • 1 teaspoon Worcestershire sauce
  • Warm pepper sauce to taste
  • Salt & pepper

Method

  • Lightly saute/fry chicken in butter.
  • Add in pepper and zucchini.
  • Saute/fry 2 min.
  • Stir in shrimp and next 5 ingredients.
  • Simmer 5 min.
  • Add in seasonings.
  • Serve over rice.
  • Makes 4 to 5 servings.
