Ingredients

  • 1 (8 oz.) pkg. cream cheese
  • 1/4 c. mayonnaise
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/8 tsp. pepper
  • 4 drops red pepper sauce
  • 2 c. finely chopped, cooked chicken
  • 2 hard-boiled eggs, chopped
  • 1/4 c. sliced green onions
  • 3 green bell pepper rings
  • 1 Tbsp. sesame seed
  • 3 Tbsp. chopped green onion or bell pepper
  • 3 Tbsp. ripe olives
  • 3 Tbsp. pimento, drained

Method

  • Mix cream cheese, mayonnaise, lemon juice, salt, ginger, pepper and pepper sauce.
  • Stir in chicken, eggs and 1/4 cup green onions.
  • Shape into log, 8 x 2-inches.
  • Wrap and refrigerate until firm, about 4 hours.
  • Cut bell pepper rings to make strips.
  • Place strips diagonally across log; divide log into 4 sections.
  • Sprinkle sesame seed on one section.
  • Repeat with 3 tablespoons onion, the olives and the pimento on remaining sections.
  • Serve with assorted crackers.
  • Makes about 4 cups.
