Ingredients

  • 4 chicken breasts
  • bread crumbs
  • 1 egg, lightly beaten
  • salt and pepper
  • olive oil
  • 1 c. tomato sauce
  • 1/4 c. Parmesan cheese
  • sliced Mozzarella
  • 1/2 lb. sliced mushrooms

Method

  • Preheat oven to 350°.
  • Pound chicken breasts until thin, then dip in egg and bread crumbs, coating both sides.
  • Season with salt and pepper.
  • Saute in oil until golden brown on both sides.
  • Place in shallow baking dish.
  • Top with tomato sauce and Parmesan cheese.
  • Saute sliced mushrooms in oil and place over chicken. Top with Mozzarella and bake in preheated oven until cheese is melted, about 20 minutes.
