Ingredients
- 4 boneless, skinless chicken breast halves
- 2 eggs
- 1 c. Italian-style bread crumbs
- 1/4 c. olive oil
- 15 1/2 oz. Prego spaghetti sauce
- 1/2 c. Parmesan cheese
- 8 slices or 5 oz. Mozzarella cheese
Method
- Flatten chicken with meat mallet to 1/4-inch thickness. Flour breasts,
- thin
- dip
- into
- egg, then bread crumbs.
- Cook chicken in
- oil on medium-high heat until well browned on both sides; be sure
- not
- to
- overcook.
- Pour spaghetti sauce into baking dish and
- place chicken on sauce and top with Parmesan cheese.
- (Dish can be prepared one day ahead and stored in the refrigerator.) Bake
- in
- 400°
- oven
- for 15 to 30 minutes; put Mozzarella on the last 5 minutes.
- Makes 4 servings.
