Ingredients

  • 6 chicken breasts
  • 2 eggs, beaten
  • 1 c. bread crumbs
  • 2 Tbsp. parsley
  • 1 tsp. garlic salt
  • salad oil (for frying)
  • 1/2 lb. sliced fresh mushrooms
  • 1 Tbsp. butter, melted
  • 2 chicken bouillon cubes
  • 1 c. boiling water
  • 1/2 lb. Muenster cheese

Method

  • Filet chicken and cut into bite-size pieces.
  • Marinate in beaten egg for 2 hours.
  • Mix together bread crumbs, parsley and garlic salt.
  • Roll pieces of chicken in crumb mix.
  • Fry in salad oil until lightly browned.
  • Melt butter and put in bottom of large 9 x 13-inch casserole.
  • Lay chicken on top.
  • Cover with sliced mushrooms, then cheese slices.
  • Mix bouillon cubes with boiling water.
  • Pour over all.
  • Bake for 35 minutes at 350°.
  • Serves 6 to 8.
