Ingredients
- 1 1/2 lb. chicken breasts
- 1 1/2 Tbsp. oil
- 1 clove garlic, minced
- 3 c. chicken broth
- 1/2 tsp. ginger, minced
- 3/4 tsp. salt
- 1 bundle long rice
- 2 stalks green onion, thinly sliced
Method
- Boil chicken pieces (to make broth).
- Set broth aside.
- Skin and debone chicken.
- Cut into pieces.
- Heat oil in skillet; saute chicken and garlic until brown.
- Add broth, ginger and salt. Simmer 1 hour.
- Soak long rice for 30 minutes.
- Add to chicken. Sprinkle with green onions.
- Serves 6.
