Ingredients

  • 1 1/2 lb. chicken breasts
  • 1 1/2 Tbsp. oil
  • 1 clove garlic, minced
  • 3 c. chicken broth
  • 1/2 tsp. ginger, minced
  • 3/4 tsp. salt
  • 1 bundle long rice
  • 2 stalks green onion, thinly sliced

Method

  • Boil chicken pieces (to make broth).
  • Set broth aside.
  • Skin and debone chicken.
  • Cut into pieces.
  • Heat oil in skillet; saute chicken and garlic until brown.
  • Add broth, ginger and salt. Simmer 1 hour.
  • Soak long rice for 30 minutes.
  • Add to chicken. Sprinkle with green onions.
  • Serves 6.
