Ingredients
- 1 (1 lb.) whole chicken breast, split and skinned
- 1 small onion, sliced and separated into rings
- 2/3 c. unsweetened orange juice
- 2 Tbsp. dry sherry
- 1 Tbsp. minced fresh parsley
- 1/2 Tbsp. all-purpose flour
- 3/4 tsp. grated orange rind
- paprika
- orange slices
Method
- Place chicken breast halves in a shallow 1-quart casserole. Arrange onion slices over each piece.
- Combine the next 5 ingredients in a small saucepan; bring to a boil, stirring constantly.
- Pour sauce over chicken.
- Cover and bake at 350° for 30 minutes.
- Uncover; bake for 25 to 30 additional minutes, or until chicken is tender, basting occasionally with sauce. Sprinkle with paprika; garnish with orange slices.
- Yields 2 servings.
