Ingredients

  • 1 (1 lb.) whole chicken breast, split and skinned
  • 1 small onion, sliced and separated into rings
  • 2/3 c. unsweetened orange juice
  • 2 Tbsp. dry sherry
  • 1 Tbsp. minced fresh parsley
  • 1/2 Tbsp. all-purpose flour
  • 3/4 tsp. grated orange rind
  • paprika
  • orange slices

Method

  • Place chicken breast halves in a shallow 1-quart casserole. Arrange onion slices over each piece.
  • Combine the next 5 ingredients in a small saucepan; bring to a boil, stirring constantly.
  • Pour sauce over chicken.
  • Cover and bake at 350° for 30 minutes.
  • Uncover; bake for 25 to 30 additional minutes, or until chicken is tender, basting occasionally with sauce. Sprinkle with paprika; garnish with orange slices.
  • Yields 2 servings.
