Ingredients

  • 1/2 teaspoons Chile De Arbol Powder
  • 1/2 teaspoons Crushed Red Pepper
  • 1/2 teaspoons Chipotle Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Chile Powder
  • 1 teaspoon Cornstarch
  • 1 teaspoon Oregano Molido
  • 2 teaspoons Rio Grande Chili Blend
  • 2 teaspoons Onion Powder
  • 3 teaspoons Ground Cumin
  • 4 Tablespoons Olive Oil
  • 1 pound Chicken Breast Or Thighs
  • 1 whole Medium Onion, Diced
  • 4 cloves Garlic, Minced
  • 1 bunch Fresh Cilantro, Chopped
  • 1 cup Water (or Juice From Black Olives)
  • 1 whole Juice Of Lime
  • 1 dash Salt And Pepper, to taste
  • 1 whole Red Bell Pepper
  • 1 whole Yellow Bell Pepper
  • 1 whole Green Bell Pepper
  • 1 package Flour Tortillas, 8-10 Count

Method

  • Whisk all of the homemade seasoning ingredients together in a bowl.
  • Set aside.
  • Heat olive oil in a large frying pan over medium high heat.
  • Cut chicken into strips and place in frying pan.
  • Once the chicken is no longer pink (but still is not done), add onions, garlic and cilantro.
  • Stir and continue to cook.
  • After onions are nice and soft and chicken is fully cooked, add water (or olive juice) and lime juice.
  • Add homemade seasoning mix.
  • Stir and continue to simmer, stirring occasionally.
  • At this time you can also add diced bell peppers, if you want to.
  • Add salt and pepper to taste.
  • Chicken is done when still juicy but excess juice has cooked down.
  • Place chicken in warmed tortillas.
  • Add lettuce, cheese, salsa, etc if desired.
  • Homemade seasoning is perfect as taco seasoning for one pound of ground meat as well!
