Ingredients

  • 4 large onions, peeled and finely chopped
  • 4 garlic cloves, minced
  • 4 boneless skinless chicken breasts, cut into bite sized pieces
  • 2 ounces cilantro, chopped
  • cooking spray
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground cumin
  • 1 pinch salt and pepper
  • 1 34 cups chicken broth
  • 14 ounces chopped tomatoes

Method

  • Spray a large frying pan with cooking spray.
  • Cook the spices over a low heat for about 30 seconds.
  • Add the onions and saute for 3-4 minutes.
  • Add the garlic and chicken to the pan and season well with salt and pepper.
  • Add the broth and chopped tomatoes and bring to the boil.
  • Reduce the heat to medium-low and cook for 30 minutes or until the chicken is cooked through, stirring occasionally.
  • Serve with your choice of accompaniments.
